Beat 3 whole eggs and 4 egg yolks until very well combined.

Add 1 cup flour to the eggs and beat until completely incorporated.

Take 6 Tbsp of 3/2 cups heavy cream and add them to the egg flour mixture. Whisk a little more.

Gradually pour in 3/4 cups clarified butter while continuing to mix.

Pour in the rest of the heavy cream. Add 1/2 nutmeg (grated) and a splash of orange blossom water.

Heat a frying pan or skillet on high, then lower the heat to medium.

Pour approximately half a cup of batter into the center of the pan and spread by swirling the pan. Cook until the middle seems done and the edges of the pancake begin to curl, then flip the pancake.
